1) Start with a massive pile of tomatoes.
2.) With a paring knife, slit a superficial cross into the vine end of the tomato. (You can also cut off the top of the tomato if you prefer that method instead).
3.) With a slotted spoon or ladle, carefully place 5-6 tomatoes in a boiling water bath for 10-25 seconds depending on the ripeness of the tomato. The riper the tomato, the less time required and vice versa.
4.) Quickly, but carefully remove the tomatoes and place them in an ice water bath to stop the cooking process.
5.) Remove a tomato from the ice water bath and, voila, peel away the skin with ease! 🙂 If the tomato has a lot of residue/paste when you peel it, you cooked it just a little too long. Adjust accordingly.
