With peach season well under way, my mom gave me about two dozen of these tasty fruits over the July 4th weekend. I love eating peaches by themselves or cut up in my cereal in the morning, but they weren’t disappearing at a fast enough rate with this method alone. I saw a very simple recipe for grilled peaches online and I thought it would be a perfect way to prepare peaches without packing on the calories.
This is a great treat that can be made within minutes due to the minimal ingredients and short prep time. I was very pleasantly surprised with how well these turned out. I love how the grill caramelizes the brown sugar mixture that’s sprinkled on top; and, if you don’t like peach skin, fear not- it slides right off after the fruit is done cooking. You can eat these peaches by themselves with freshly whipped cream or a drizzle of honey or with a small scoop of vanilla ice cream on the side. Either way, if you love peaches like I do, this recipe won’t disappoint!
- 2 peaches
- 2 Tsbp brown sugar
- 1/2 tsp cinnamon
- vegetable oil spray
In a small bowl, combine brown sugar and cinnamon. Peel the skin off the peaches. Cut peaches along the seam all the way around and twist halves off the pit. Spray cut sides with vegetable oil. Cook, cut side down, on a hot grill until fruit has grill marks, 3 to 4 minutes. Brush tops with oil, turn over, and move to indirect heat. Sprinkle cut sides with cinnamon sugar. Cover grill and cook until sugar is melted and fruit is tender, 10 to 15 minutes. Sprinkle with extra cinnamon sugar, if desired.
